Bento Box, one of the “OG’s” of sushi delivery in Barbados, has long been synonymous with innovation, freshness, anda commitment to healthier dining options. But where is Bento Box heading next? Bento Box is undergoing a culinary makeover, introducing some exciting additions such as Korean chicken and pork, sushi nachos and the continuation of sushi dogs to its menu taking the concept of fusion cuisine to new heights.


A NEW RESTAURANT: SAKE
Bento Box is expanding its horizons with the arrival of its new restaurant, Sake, at the end of the year, location to be announced. Sushi lovers and asian cuisine enthusiasts eagerly await the unveiling of this new culinary revolution on the South Coast of Barbados. Keep your eyes peeled for more details as the unveiling draws near.


SUMMER OF SUSHI
At Bento Box’s flagship location in Warrens, patrons can look forward to a summer filled with sushi specials. A full menu overhaul is underway, featuring an array of Korean-inspired touches. Nothing pairs with sushi like a homemade sriracha mayo with organic chandon beni – a local more sustainable alternative to cilantroand a kick-ass bowl of house fermented kimchi. Stay tuned for a new menu out of Bento Box’s front-and-central food truck in the south coast’s premiere outdoor food court. New flavour combinations of delicious melt-in-your mouth Korean style Bao Buns are going to make that food court smell like heaven. Not to mention how good the late night Bao Bun will taste on the way home from The Gap on a Saturday evening.

HEALTH, WELLNESS, SUSTAINABILITY

Bento Box is committed to promoting a healthier lifestyle, sourcing ingredients locally and eschewing artificial additives like MSG. From homemade kimchi to freshly squeezed juices and lemonades, every item on the menu reflects a dedication to quality and sustainability. Bento Box is committed to minimising waste wherever possible, implementing a closed-loop system that repurposes ingredients like cucumber centres through a cold pressed masticating juicer to create a cucumber lemonade.

SPEARFISHING AND FORAGING

Originally spearfishing on the island’s west coast, Scott’s love affair with sushi began in his own backyard. Drawing inspiration from the abundance of Bajan “pear” (avocado) and Julie mango trees in his backyard, he began experimenting with making sushi at home, although he admits that he wasn’t very good at it initially. He and his wife, Astra, experimented with the flavours at home.

THE BIRTH OF A LEGEND: “THE ORIGINAL BENTO BOX”

Through his sushi experimentations arose fulfilling orders for deliveries across the island. Then, the original famous “Bento Box”- an array of sushi served in a pizza box sold at the prepandemic Holders Season festival. He sold out every Saturday so consistently that he decided to open a restaurant, and thus Bento Box was born.
