Serves 4
INGREDIENTS:
1 Amir’s Fresh Halal Chicken (1.5kg/3lbs)
1/2 cup butter, softened
2 tbsp finely chopped fresh rosemary
2 garlic cloves, minced
2 spring onions, finely chopped
2 tbsp chopped parsley
1 1/2 tbsp chicken bouillon powder
4 medium red potatoes, sliced
Olive oil cooking spray Lemon wedges for serving
PREP: (15 MINS)
Preheat oven to 400°F. Line a baking traywith foil.Gently loosen the skin from the chickenbreast to create a pocket.Mix together the softened butter, choppedrosemary, minced garlic, chopped springonions, parsley and 1/2 the bouillonpowder. Season with pepper.
Reserve 1 tbsp of the butter mixture. Spoon the restunder the chicken skin, spreading it out evenly.Brush the reserved butter over the top of the chicken.Tie the legs together with kitchen string.
ROASTING: (1 HOUR)
Place the chicken on the prepared tray and arrange the sliced potatoes around it. Spray the potatoes with olive oil spray and sprinkle with remaining bouillon powder and pepper. Roast for 50-60 minutes until potatoes are golden and chicken is fully cooked. Let the chicken rest 10 minutes before slicing.
TO SERVE:
Slice the juicy, flavourful chicken and arrange on a platter with the roasted potatoes. Garnish with lemon wedges. Your delicious garlic and rosemary roasted chicken is ready to serve a family of 4!
